Butternut Squash...

I received a gift from my daughter of a basket full of butternut squash...locally grown by her husband's grandfather...and needing to be used soon. I found this recipe for Warm Butternut Squash and Chickpea Salad on Orangette a long time ago and wanted to try it out...Now I can vouch for how well all these different flavors meld together...

I really want to buy her new cookbook soon...

...love the pictures and the recipe. My Mom used to make a pie from a Cushaw Squash. It was similar to pumpkin pie, but lighter and yellow. It was my favorite:)

Hi Pliag
I have 2 questions.
Whats in the bowl?
and what is orangette?

We eat a lot of pumpkin, roasted slowly so it caramelizes sweeter,
cubed and baked and cooled for salad
as soup with just a clove of garlic ground pepper and a little chicken stock
mashed into mashed potato

I love it especially with fish or chicken...

ELK - Thanks!

willow - the ingredients sounded odd but they worked well together...Orangette is a great site...

Mickey - Thanks for visiting! My favorite pie as a child was squash pie...my mother always made that instead of pumpkin pie too...yummy!

Delwyn - Can you click on the links to the blog Orangette and her recipe? The answers to your questions are only a click away!...and yes that is my name - backwards:)
